Tzatziki Sauce

Did you know that tzatziki may have originated in India?

There are many different theories on the origin of the famous Greek sauce. One theory suggests that it originated in India with raita sauce, and that it was spread through the Persian and later the Ottoman Empire trade routes, to Greece, the middle east, and the Balkans, where variations of this sauce still exist today.

What all can agree upon is that this refreshing dish is a staple of Greek cuisine. It is typically made with a base of yogurt and cucumber, garlic, olive oil, salt, vinegar or lemon juice, and herbs like dill, mint, parsley, or thyme. Served along pita bread, gyros, souvlaki, and more, this dish is a delicious addition to many meals.

Ingredients:

1. 2 cups plain Greek yogurt

2. 1 cucumber

3. 3 finely chopped garlic cloves

4. 1 lime

5. ¾ cup freshly chopped dill

6. Salt & pepper

Instructions:

1. Peel cucumber and finely grate with a box grater

2. Transfer grated cucumber to a cheese cloth and add a pinch of salt. Let sit for 5-10 minutes

3. Squeeze out all of the water from the grated cucumber

4. Transfer grated cucumber to a bowl

5. Add the Greek yogurt, the chopped dill and garlic

6. Add the juice of the lime

7. Add salt and pepper to taste
