Tuna Melt
Ingredients:
1. 1 tomato
2. 2 cans of high quality tuna
3. Olive oil
4. 1 lime
5. 1 rib of celery
6. 3-4 green onions
7. Bread
8. Mayo (ideally with lime or lemon)
9. Cheddar cheese
10. Salt & pepper
Instructions:
1. Finely chop the celery and the green onion and add to a bowl
2. Add the tuna, along with ½ cup of mayo, 1 tbsp of olive oil and the juice of ½ lime
3. Mix well and add more lime juice and salt and pepper to taste
4. Toast two pieces of bread
5. Slice cheese and tomato
6. Spread tuna salad over toasted bread, the top with tomatoes and season them with salt and pepper, then top with cheese slices
7. Melt cheese under broiler or with a blow torch and then close the sandwich
