Salsa
Did you know that salsa has existed for thousands of years?
The origins of salsa can be traced back to the Aztecs, Mayans, and Incas who used different combinations of chiles, tomatoes and spices as a condiment on their food.
Salsa has been widely used in Latin American cuisine ever since, but it did not have a common name to the wider world until the Spaniards conquered Mexico around 1519. It was in this era that a Spanish priest is credited with giving it the simple name “salsa”, meaning “sauce.”
Today salsa is popular all over the world for its versatility and great flavors!
What else do you know about salsa?
Ingredients:
1. 2 tomatoes
2. ½ yellow or white onion
3. 2 garlic cloves
4. ½ serrano pepper
5. ½ lime
6. ½ finely chopped cilantro bunch
7. Salt & pepper
Instructions:
1. Cut all vegetables in halves or quarters
2. Roast tomatoes, onion, garlic cloves and serrano pepper on a flat top, under the broiler or with a blow torch
3. Mince in a molcajete starting with the serrano pepper and the garlic, then the onion, and finally the tomatoes
4. Alternatively, skip step 3 and blend everything in a blender
5. Add the chopped cilantro, the juice of the lime and salt and pepper to taste
